Fionn and I love granola and Greek yogurt. We do not love paying for overpriced hippie granola or settling for granola with ingredients we can't pronounce. Thus began my quest to make my own.
A year of tweaking, adding, and taste testing, this granola was born. It's great on yogurt or with milk, and can healthify some ice cream or frozen yogurt if you want a fast dessert. Plus, it's crazy easy to make!
Homemade Almond, Coconut, and Date Granola
2 cups rolled oats
1 packet of sliced almonds (2/3 cup)
1 cup of shredded coconut
1/2 tsp allspice
1/2 tsp cinnamon
1/4 cup canola oil
2 Tbsp maple syrup/honey/agave
1 cup dried dates, chopped
Preheat oven to 150 C/300 F.
Combine oats, spices, almonds, and coconut in a large bowl, stir to combine.
Mix together oil and maple syrup and pour over the dry ingredients, stir to coat everything.
Line a baking sheet with parchment paper and spread granola mixture in an even layer.
Bake for 15 minutes. Remove from oven, add dates, and stir granola around to ensure even baking.
Bake for an additional 10 minutes (keep an eye on it so the coconut doesn't burn!)
Store in an airtight container for up to 1 week.
