Tasty Tuesday: Breakfast Casserole

I'd never had a breakfast casserole until someone brought one to our weekly morning Bible study. It was so good and seemed so easy. When my friends came to visit last weekend I was wracking my brain trying to think up easy, fast, no fuss breakfasts so we could spend more time talking and less time slaving over hot ovens.

Enter Le Breakfast Casserole.

So so so so easy. It took around 10-15 minutes to put together, bake for 30 minutes, et voila. Breakfast.

-half bag Ore-Ida hashbrowns
-cooked bacon, ham, pancetta, sausage (I used bacon)
-4 eggs (more if you like it really eggy)
-1/4 cup milk
-cheddar cheese, grated
-bell pepper, diced
-onion, diced
-garlic salt

Preheat oven to 350 F/180 C.

Fry bacon and cook hashbrowns according to package directions. Saute onion and bell pepper until tender.

Arrange hashbrowns on the bottom of a greased casserole dish. Top with chopped bacon, onion, and bell pepper. Season with garlic salt, pepper, and cumin.

Mix eggs and milk together and pour over hashbrown mixture. Top with shredded cheddar cheese. Cover with tin foil and bake for 20-25 minutes. Remove foil and bake an additional 5 minutes.
